Royal Brunei Catering is offering a week-long Philippine Food Festival of chef specialties from spicy and creamy vegetables to goat’s meat stew, oxtail in peanut sauce, and roasted chicken Pinoy style from Tuesday.
The festival will be held from June 1-7 at the Seasons Restaurant in Centrepoint, Gadong to mark the 112th Philippine Independence Day, the Philippine Embassy announced.
Diners will be entertained by Filipino traditional dances, ballet performances and live music from the in-house RBC band during lunch and dinner.
Students from the Philippine Embassy’s Filipino language class and from Ballet Regina will be performing folk dances and ballet movements during the food festival, said Philippine Embassy Administrative Office Eleanor Belgica.
Appetisers include Kilawin Tanigue (marinated tenggiri fish in vinegar and ginger) and Crispy Kangkong – deep fried breaded kangkong vegetable.
Soup choices are Chicken Binakol – chicken soup cooked in coconut juice famous in the province of Batangas, and Molo Soup, a version of wanton soup which is a specialty of the town of Molo, Iloilo province.
The main dishes are Morcon or stuffed beef roll; Litsong Manok, Philippine style of roasted chicken; Kare-Kare, oxtail in peanut sauce; Kaldereta, beef or goat meat in tomato sauce; Igado and Pinakbet, an authentic Filipino dish in the Ilocos region; Laing, (spicy and creamy (gabi) taro leaves) and Bicol express, a stew of long chili (lada panjang), coconut milk, shrimp paste, onion and garlic from the Bicol region.
Dessert includes Leche Flan, caramelised egg yolk; Brazo de Mercedes, creme-filled log cake with golden custard filling; and Maja Blanca, made from coconut milk and corn starch.
